April to June is mango time in Moinabad's orchard country. Eight easy recipes, raw and ripe, that suit a basic farmhouse kitchen and a hot day by the pool.

Mango season, roughly April to June, is the tastiest time for a Moinabad farmhouse weekend. Carry a mix of raw and ripe mangoes from the city or Moinabad town, and you can make cooling drinks, a tangy dal, a fresh salsa for the barbecue and frozen desserts, all with a basic farmhouse kitchen and a fridge.

Below are eight recipes that need little equipment, plus tips on buying and storing mangoes for a hot-weather stay.

Before you cook: buying and storing mangoes

Moinabad sits among mango orchards, and some farmhouses have mango trees on the property. Those trees belong to the owner, though, so ask the caretaker before anyone picks fruit. For cooking, buy your mangoes in advance.

  • Raw mangoes: firm, green and sour. Used in panna, dal, chutney and salads.
  • Ripe mangoes: fragrant at the stem and slightly soft when pressed. Banganapalli is the familiar Telangana and Andhra choice; buy what looks and smells best at your market.
  • Carry ripe mangoes in a box with padding so they do not bruise on village roads.
  • Do not refrigerate unripe mangoes. Chill ripe ones for an hour before eating.
  • Wash mangoes well and soak them in water for a while before cutting; it is a common household habit to remove surface sap and dust.

Drinks for a hot afternoon

1. Aam panna

Boil or pressure-cook two raw mangoes until soft (do this at home if the farmhouse kitchen is basic). Scoop out the pulp, then blend with sugar or jaggery, roasted cumin powder, black salt, a pinch of pepper and mint. Store the concentrate in a bottle. At the farmhouse, mix about one part concentrate to three or four parts chilled water with plenty of ice. It is the most refreshing thing you can drink after a long swim.

2. Mango lassi

Blend ripe mango pulp with thick curd, a little milk, sugar to taste and a pinch of cardamom. If there is no blender at the farmhouse, mash very ripe mango with a fork and whisk hard with the curd. For more ideas, see our mocktails and drinks for a farmhouse post.

3. Mamidikaya pappu (raw mango dal)

A Telugu home favourite. Pressure-cook toor dal with turmeric. Add peeled, chopped raw mango and green chillies and cook until the mango is soft. Mash lightly, add salt, then temper with ghee or oil, mustard seeds, cumin, dried red chillies, garlic, curry leaves and a pinch of hing. Serve with hot rice, a spoon of ghee and papad. Adjust the mango quantity to how sour you like it.

4. Raw mango chutney

Grind raw mango, green chillies, a little coconut if you have it, salt and a pinch of jaggery. Temper with mustard seeds and curry leaves. It goes with dosa, rice, or as a dip for grilled food.

5. Mango and peanut salad

Mix finely chopped raw mango, onion, cucumber, tomato, roasted peanuts, coriander, green chilli, lemon juice, salt and chaat masala. No cooking at all, ready in ten minutes, and good alongside a heavy meal.

For the evening barbecue

6. Ripe mango salsa

Dice one ripe mango, half a red onion, a small tomato, a green chilli and coriander. Add lime juice and salt. Spoon it over grilled fish, paneer or chicken; the sweetness balances smoky, spicy marinades. If you are planning a grill night, our barbecue marinades for a Moinabad farmhouse pair well with it.

7. Mango popsicles

Blend ripe mango with a little sugar and lemon, pour into popsicle moulds or small paper cups with a spoon in the middle, and freeze. Make them as soon as you check in; they need several hours in the freezer. Ask the host whether the fridge has a usable freezer compartment before you plan around it.

8. Aamras with puri

Pulp very ripe mangoes and stir in a pinch of cardamom and a little sugar if needed. Chill. Serve with hot puris fried in the farmhouse kitchen, or with chapatis carried from home. It is a sweet, filling Sunday brunch before check-out.

A short packing list for a mango weekend: a sharp knife and a peeler (farmhouse knives are often blunt), a chopping board, zip-lock bags for leftover pulp, popsicle moulds, roasted cumin powder, black salt, jaggery, curry leaves and a few lemons. Village shops nearby are small, so do not count on finding these after check-in.

Farmhouse kitchens vary, so ask the host what equipment is available, and whether outside cooking is fine, before you pack ingredients.

Plan a mango-season stay

April to June in Telangana is hot, so a pool matters. Spend the midday hours in the water or an AC room, and cook in the cooler morning or evening.
